Abstract

Jamur tiram putih (Pleurotus ostreatus) memiliki siklus panen terbatas karena kandungan nutrisi dalam media tumbuh menurun setelah panen pertama, sehingga memperlambat pembentukan tubuh buah berikutnya. Untuk mempercepat pertumbuhan pasca panen, diperlukan penambahan nutrisi seperti karbohidrat dan zat pengatur tumbuh (ZPT) ke dalam baglog. Penelitian ini bertujuan untuk menganalisis pengaruh substitusi nutrisi menggunakan air cucian beras (air leri), air
kelapa tua, molase, serta kombinasinya terhadap kecepatan pertumbuhan jamur tiram putih pasca panen. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) satu faktor yaitu faktor substitusi nutrisi. Jumlah sampel dalam penelitian
ini sebanyak 25 sampel dengan 5 kali ulangan. Data yang diperoleh dianalisis menggunakan uji Analisis Sidik Ragam (ANSIRA) kemudian dilanjutkan dengan uji Beda Nyata Jujur (BNJ). Hasil analisis menunjukkan Fhitung(40,90) > Ftabel(α=0,01) (4,43). Hal tersebut menunjukkan ada perbedaan yang signifikan dari tiap perlakuan, maka H0 ditolak dan H1 diterima. Hasil uji BNJ terbaik pada kecepatan pertumbuhan ditunjukkan oleh perlakuan air kelapa tua (4,89a), perlakuan paling rendah didapat pada perlakuan kombinasi kombinasi (7,49b). Hasil BNJ berat basah juga ditunjukkan oleh perlakuan air kelapa tua (4,89a) dan paling rendah pada air leri (91,13a). Dari ketiga nutrisi semuanya mengandung karbohidrat dengan taraf dan jenis yang berbeda. Air leri mengandung pati (amilum) dan sedikit karbohidrat kompleks, air kelapa tua dan molase mengandung glukosa, sukrosa, dan fruktosa sebagai sumber karbon. Namun air kelapa tua memiliki keunggulan karena mengandung zat pengatur tumbuh(ZPT) berupa hormon auksin dan sitokinin yang terbukti mempercepat pertumbuhan jamur tiram putih pasca panen.

White oyster mushrooms (Pleurotus ostreatus) have a limited harvest cycle because the nutrient content in the growing medium decreases after the first harvest, slowing
down the formation of the next fruiting body. To accelerate post-harvest growth, nutrients such as carbohydrates and growth regulators (ZPT) need to be added to
the baglog. This study aims to analyse the effect of nutrient substitution using rice washing water (air leri), old coconut water, molasses, and their combinations on the growth rate of white oyster mushrooms post-harvest. This study uses a Complete Randomised Design (CRD) with one faktor, namely nutrient substitution. The
sample size in this study is 25 samples with 5 replications. The data obtained were analysed using Analysis of Variance (ANOVA) followed by the Honest Significant Difference (HSD) test. The analysis results showed Fcalc(40,90) > Ftab(α=0.01)
(4.43). This indicates a significant difference between treatments, so H0 was rejected and H1 accepted. The best BNJ test results for growth rate were shown by
the old coconut water treatment (4.89a), while the lowest results were obtained from the combination treatment (7.49b). The BNJ results for wet weight were also shown by the old coconut water treatment (4.89a) and the lowest results were obtained from the leri water treatment (91.13a). All three nutrients contain carbohydrates in varying amounts and types. Leri water contains starch (amylum) and a small amount of complex carbohydrates, while old coconut water and molasses contain glucose, sucrose, and fructose as carbon sources. However, old coconut water has an advantage because it contains growth regulators (ZPT) in the form of auxin and cytokinin hormones, which have been proven to accelerate the post-harvest growth of white oyster mushrooms.
